
Like most round-up recipes, this chili is best eaten after morning of hard work with a big crew of family and friends.
- 3 onions, chopped
- 1 T cooking oil
- 5 T chili powder
- 3 cloves garlic chopped
- 2 t whole cumin
- 2 lbs. ground beef
- 1 small can tomato paste
- 2 cups diced tomatoes, fresh or canned
- 4 cups cooked beans – pinto, black, kidney or a combination
- 4 cups water
- salt to taste
Directions:
Saute onions in cooking oil until softened. Add chili powder, garlic and cumin. Cook for 3 minutes. Add ground beef and cook for 5 minutes, stirring frequently until ground beef is browned. Add tomato paste, tomatoes, beans and water. Cover and cook for 1/2 hour. Check for seasoning. Serve over rice in local Hawaiʻi style.
